ScanGauge codes and values

G'day All
OK, this may be a big ask but I'm hoping to pick some collective brains here!! Im the very happy new owner of a MY19.75 PxIII XLT 3.2, upgraded with the Adventure X Tickford pack... generally will be short weekends away and towing my other pride and joy, a 6.2m Chivers Thresher..
I also have fitted a new ScanGauge II and was wanting to know;
What gauges are most of you monitoring / recommending (I've currently got water temp, EGT, auto trans temp and inlet air temp)
Is there a code for oil temp (engine)
Is there a list of what I would call "caution/warning values" (wearing my airline pilot hat) that would describe when things are getting too hot/high/lo pressure etc? Obviously I'm monitoring and starting to get an idea of what appears to be "normal" but it would be good to find some manufacturers figures.
