I have been told that newer cars are pretty much going to scrap, because they can't be used for EV conversions because of CANBUS problems.
Is there a way to modify modules / turn them on or off if the engine and gears were replaced with an electric motor?
Transport mode perhaps?

There is always a way. Just lots of time is all.
Emulate the canbus messages that are missing is one, leave as many modules as possible in the vehicle even though they may not be used. Worst case you have some DTCs.
Over the next 5 to 10 years prices will come to a point where a conversion with time and effort taken into account may be far from feasible. Time will tell.

Thanks Stewart
One would hope that in the next 5 to 10 years that OEMs would have developed a conversion kit that does integrate with the existing CANBUS. Seems to me that there is a potential business case there.
With all the steel on the roads out there, it seems like a lot of impact to swap every single car with a new one. Especially after some enthusiasts have gone to a lot of trouble to mod their vehicle to just they way they like it.
A comment that I have received from some EV conversion places is that the CANBUS will not receive EV data streams (paraphrased). However I would be happy to bypass the CANBAUS and find a way to make the stereo, reverse camera/sensors, AC and central locking work. For these would an integration of the OEM key and existing relevant bits be possible using forscan?
Cheers

Personally I do not believe it would be in an OEM interest to spend the time. Cheaper to engineer a new car than re engineer an existing one. Just my opinion anyway.
You will need to build your own programmable canbus modules to achieve what you want. The biggest issue would revolve around safety items. It would be far easier to leave everything in place and just emulate the sensors for the conventional engine, this would in theory mean that everything will run as it did before although not entirely as easy as it sounds. Also keep in mind all safety system will need to be left in tact or it would not be roadworthy.
You would need more than Forscan to achieve it, ideally custom PCM tune etc. Custom modules to emulate various existing sensors and further thought would have to be made to whether the existing transmission was used or not. This will add another to the project.
I see it as an enthusiast game at the end of the day with custom kits made for 1990 and earlier vehicle although they will be 3rd party kits and not OEM.
